: Lactose is a reducing sugar, it also caramelizes, although the temperature at which it caramelizes is higher than most sugars,

hygroscopicity: Lactose is non-hygroscopic, free flowing in high temperaturesand high relative humidity, this is one reason for using lactose as a carrier for other ingredients such as high intensity sweetners, flavors, and seasonings.

sweetness: 10% sucrose solution is equal to 20% lactose solution in perceived sweetness.


solubility: lactose is soluble, but less so than the other common sugars such as sucrose, frutose and dextrose.
