Oleoresins are extracts of natural spices and herbs and represent the volatile and non volatile components of the spice or herb. They can be standardized if the need arises with a permissible diluent or emulsifier.

Oleoresins are extracted by a process of solvent extraction, followed by removal of the solvent to extremely low levels typically less than 25-30 parts per million. Its quality is evaluated on the basis of presence of the active ingredients in desired levels. They are widely used as a diluted dispersion plated on a neutral dry carrier or as a diluted blend in a soluble medium such as vegetable oil to match the desired strength of the ground spice/ or erb.
