Every Hi-Tech Flake Ice Maker is a vertical, double-waUed, cylindrical evaporator (1) The cylinder remains stationary, while the internal rotor, water rings and drip shield revolve. Water Is pumped into the top of the rotor (2) and distributed through the water rings{3) on to inner freezing surface in a continuous curtain(4). A high velocity, low temperature refrigerant contained between the cylinder's walls freezes the water almost Immediately. The rotor arm carries a set of stainless steel ice removal tools(S). Ice is sub cooled in the drying arc and then the tools shear the ice from the freezing surface without touching the wall. The Ice falls out (6) the bottom of the ice maker in to the storage bin.
