Bhuna Style Masala

Principle spices use in central region of India is Cumin Seeds, Nigel Seeds, Ajwain Seeds, and Coriander Seeds, Cumin seeds, Cloves and cinnamon sticks. Bhuna style means roasted or toasted. Central region of India is famous from the jungle called sunder van, many wander in this forest for picking dry wood to sell it for money making. They pass many days in the jungle, during this period they hunt for quick meals and without the use of utensils. Cooking is hard so they roast / cook food on fire with help of skewers. This became fashionable in the modern days.

Modern People modified it by cooking it with gravy, till it is dried out.

The spices they use gives them a little burnt sort of flavor. 'Bhuna' also means burnt flavored. When something is cooked in gravy till it becomes dry, and then covers all the pieces. You can really enjoy it with any type of Indian bread or rice

Thyme Masala

Botanical name:Thymus vulgaris Linn (Thyme)
Thymus serpyllum Linn (Wild Thyme).
Family name:Labiatae.

Indian names are as follows:
Hindi:Banajwain
Punjabi:Marizha, Masho, Rangsbur
Urdu:Hasha.

Dried leaves and flowering tops of both the species are known as Thyme, though commercially the cultivated variety, that is the first variety is important and globally popular. It is not traditionally popular spice in India, but gaining popularity during recent past due to impact of globalization.

The dried leaves are curled, of brownish green color, usually not longer than 6 to 7 mm and marketed in whole or ground form. The flavor is aromatic, warm and pungent.

Vanilla Masala

Vanilla, a member of the orchid family is a climbing monocot possessing a stout, succulent stem; short petiole, oblong leaves; about 20 cm long. The inflorescence is a raceme with 20 or more flowers. Flowers are 6 cm long, 2.5 cm wide, either yellowish green or white. Fruit popularly known as ‘beans' or ‘pod' is a capsule, nearly cylindrical and about 20 cm long.
Mauritius in 1827 and in Madagascar in the year 1848. Even though. vanilla originated in Mexico, now the major producing countries are Madagascar and Indonesia. Vanilla is the second most expensive spice traded in the world market.

Origin and Distribution
It is a native of Atlantic Coast from Mexico to Brazil. The important vanilla producing countries are Madagascar, Mexico, Tahiti, Malagasy Republic, Comoro, Reunion, Indonesia, Seychelles and India.
Vanilla thrives well from the sea level up to 1000 meter MSL., under hot, moist, tropical climate with adequate well-distributed rainfall. Natural growth is obtained at latitudes, 15 degree North and 20 degree South of the equator. The optimum temperature ranges from 21-32 degree C and rainfall 2000-2500 mm annually. Dry period of about 2 months is needed to restrict vegetative growth and induce flowering. It grows best in light, porous and friable soils with pH. 6-7. Partial shade is essential for successful cultivation.

Uses
Vanilla is used mainly as a flavoring material; a critical intermediary in a host of pharmaceutical products and as a subtle component of perfumes. As a flavoring agent, it is used in the preparation of ice creams, milk, beverages, candies, confectionaries and various bakery items.

Aniseed Seed

Aniseed is ground-gray to grayish-brown in color, 3.2 to 4.8 mm in length, oval in shape and with a short stalk [pedicel] attached. Five longitudinal ridges are available on each per carp. It has a characteristic agreeable odor and a pleasant aromatic taste. Aniseed is available whole or ground.

Aniseed can externally be used as an insecticide against small insects such as lice, mites and vermin. Fungicidal properties are also present in it.

Aniseed is an annual herbaceous plant belonging to the ajowan family and a native of the East Mediterranean region. It is widely cultivated in Bulgaria, Cyprus, France, Germany, Italy, Mexico, South America, Syria, Turkey and Russia. In India, it is grown to a small extent as a culinary herb or as a garden plant. It is often confused with fennel [Foeniculum vulgare], since both are known as saunf in India. It is grown on a small scale in Rajasthan, Punjab, Uttar Pradesh and Orissa. It can be successfully grown as a Rabi crop.
