Gms is formed by reaction of stearic acid with glycerine of pharma quality under vaccum and nitrogen blanket is a stainless steel reactor, to get a food quality product. The product is formed in liquid state and solidifies on cooling, so it can be cooled either on a flaker to give flakes form or it can be spray dried to give powder ( microgranule form ). It can be processed to give either self emulsifying grade ( SE grade ) which on mixing with water will form paste which is mixed with the dough or maida and butter / ghee etc to emulsify or equally distribute the butter / ghee/oil in the base material. It can also be made in non self emulsifying form, which is generally used for lubrication in the base material and giving it smoother mouthfeel.
GMS is also used for emulsification or increasing water quantity in face creams etc .
It is used in plastics as a shining agent and lubricant.
During reaction to form GMS monoglycerides ( or monoester ), diester and triester, all three are formed. But the monoester or monoglyceride only acts as emulsifier and is the desirable part Our GMS-ECO and Super have a mono content of 40 % . In a good reaction the quantity of original reactants should be less if reaction is complete. So free stearic acid and free glycerine are supposed to be less than 5 %. Normally our free stearic is less than 1 % ( reflected in acid value ) and free gylcerine is less than 5 % .
Lab testing of quality of GMS is done by forming gel in lab with hot water which should be good in colour and stable in nature and as thick and creamy as possible. Also odour should be minimum. In our new process material , odour is much less than earlier.
