Cassia gum is comprised of at least 75% polysaccharide consisting primarily of a linear chain of 1,4-_-d-mannopyranose units with 1,6-linked_-d-galactopyranose units. The ratio of galactose to mannose is 1:5. Cassia gum swells in water and forms high-viscosity aqueous colloids after it is boiled.
