Mung Beans

Mung Beans are commonly used in Chinese cuisine as well as in the cuisines of Burma, Sri Lanka, Thailand, Japan, Korea, Philippines, Bangladesh, Pakistan, India, Indonesia, Vietnam and other parts of South-east Asia. The starch of mung beans is also extracted from them to make jellies and “transparent” or “cellophane” noodles. Mung bean is the seed of Vigna radiate, which is native to India. The green gram beans are small, ovoid in shape, and green in color. These are generally eaten either whole (with or without skins) or as bean sprouts, or used to make the dessert “green bean soup”. The starch of mung beans is also extracted from them to make jellies and “transparent/cellophane” noodles. Whole mung beans are generally prepared from dried beans by boiling until they are soft. These are then cooked like any other dal. In Vietnam, the transparent wrapping of Vietnamese spring rolls is made from mung bean flour. In Filipino cuisine, meat is sauteed with garlic, onions, and bay leaves, then mung beans are added and cooked. Mung batter is used to make crepes named Pesarattu in Andhra Pradesh, India. Whole moong can be sprouted and used in varied preparations ranging from salads, soups and stir fry.

Moth Beans

Moth Beans is pronounced as “moat” beans and not as Moth, though the spelling says otherwise. They are also known as Moath, Dew Beans, Papillons, Muths, Mot Beans, Mat Beans, Turkish Grams, and mMt Grams. These beans are commonly known as “Matki” in India. Products offered in this range are small, elongated beans with a brown skin and a brownish-yellow interior, which have a nutty flavour and a strong earthy smell. Moth beans have a rich, nutty flavour which can complement an assortment of dishes.

How to use in Cooking:

  • It is mostly cooked dry with spices, coconut and fresh cilantro/coriander leaves
  • These products can also be enjoyed as a thick puree to be eaten with rice
  • Sprouted Moth is stir-fried with a few spices and eaten with pau/dinner rolls as snacks
  • Goes very well with fried onions, which add a touch of sweetness to the nuttiness of beans
  • The young seed pods are often eaten whole as vegetables, and they can also be spices in chutneys and used in pickled foods
  • When allowed to dry, the beans are cooked and then used in curries, salads and other dishes
  • These are reasonably nutritious, making them a good addition to the vegetarian diet, and many people enjoy the nuttiness of moth beans in foods like risotto, couscous, and soups
