Like other spices, Clove Seeds are available throughout the year. They are renowned for providing their uniquely warm, sweet and aromatic taste to ginger bread and pumpkin pie, but they can also make a wonderful addition to split pea and bean soups, baked beans and chili. Cloves are the unopened pink flower buds of the evergreen clove tree. The buds are picked by hand when they are pink and dried until they turn brown in color. Cloves are about 1/2-inch long and 1/4-inch in diameter and with their tapered stem, they resemble tiny nails. In fact, their English name is actually derived from the Latin word clavus, which means nail. Although cloves have a very hard exterior, their flesh features an oily compound that is essential to their nutritional and flavor profile.

Culinary Uses:

Since cloves have a very intense flavor, especially those that have been ground, care should be taken when deciding how much to use in a recipe so as to not overpower the flavors of the other ingredients. The easiest way to grind whole cloves into a powder is to use a coffee grinder.

 

Medicinal Uses:

 

Temporarily treat a toothache. You can temporarily alleviate the pain by dabbing a little clove oil on a cotton ball and placing it on the sore tooth or on your gums. An added benefit is that it will also pull out any infection
Relieve upper respiratory infections. Ayurveda suggests making a tea to lessen, or prevent, colds and flu. It is also used as an expectorant, making it easier to cough up phlegm. Cloves are a natural painkiller and also attack germs, so they'll help you get rid of that sore throat.
Reduce inflammation. Use clove oil to massage sore muscles; some also use it for arthritis and rheumatism.
Treat scrapes and bruises. Cloves are pretty strong and can sting, so the best bet is to probably make a poultice with a little olive oil.
Improve digestion Cloves help relax the smooth lining of the GI tract, so they help alleviate vomiting, diarrhea, intestinal gas and stomachaches. Just be careful; since they're strong, they can also irritate the stomach.
Enhance health Sometimes used as an , cloves can also help men from reaching orgasm too early.

Black Pepper Seed is produced from the still-green unripe pepper plant. The fruits are cooked briefly in hot water, both to clean them and to prepare them for drying. They are dried in the sun or by machine for several days, during which the pepper around the seed shrinks and darkens into a thin, wrinkled black layer. Once dried, the spice is called black peppercorn.

There are different types of black pepper:

 

Tellicherry Black pepper from South India - The of black pepper. Very bold, pungent aroma. Not for the fainthearted. Use where you want a very pronounced, lingering pepper flavour. Best in Indian food
Sarawak Black from Borneo and Malaysia - Relatively mild with a fruity bouquet. Best suited to delicate flavours. Try grinding over fresh strawberries
Lampong Black From Sumatra, Indonesia - Mildly pungent and aromatic. This is the one to use when making curry mixtures

 

Culinary Uses:

 

Black pepper is one of the most versatile spices used in virtually in all kinds of savoury cooking. In order to keep their fragrance and flavor intact, they are generally ground just before preparing dishes and added at the last minutes in the recipes (since prolonged cooking results in evaporation of essential oils
Black peppercorns along with other spices and seasonings are used to marinate chicken, fish, and meat
The spice is used liberally in Indian vegetarian and chicken curries and in the Middle-East, in meat and rice dishes
They can be used in the preparation of soups, barbecue sauces, pickling and as a main ingredient in variety of curry powders (Indian garam masala powder)
