The Industrial Steam Blancher for Fish is specially designed for seafood and fish processing plants to ensure efficient and uniform blanching using controlled steam. This process helps in enzyme inactivation, texture retention, color preservation, and improved product quality before IQF freezing, cooking, or packing.

Manufactured by Cochin Food Tech Pvt. Ltd., the machine is built with heavy-duty stainless steel construction and advanced temperature control systems to meet international food safety standards. Designed for use with the CF TECH series of Cookers and Blanchers. After cooking or steaming, the product is immediately fed into the CF Tech’s Rain shower cooler where chilled-water gently falls evenly over the product through the rain shower system. The system is designed for the product to achieve core temperature of 5°C or less.

The cooker uses a forced convention method and the process consist of a low temperature mixture of air steam and condensate water which is constantly circulated inside the chamber and distributes heat uniformly and efficiently. The products are cooked, blanched or pasteurized consistently using less steam than traditional methods, and helps in maintaining the high quality of the products.
The unique design as well as the PID controlled motorized steam valves and VFD controlled blowers ensures that the cooking yield is always kept at a maximum and gives an energy savings better than any other cooking method in the market. The Steam Cooker is manufactured entirely in stainless steel and non- corrosive materials for providing the best possible conditions for quality processing. The twin layer insulated outer body gives very little heat loss to the surroundings.

The counter flow cooler and the conveyor are manufactured entirely in stainless steel and non-corrosive material.
