Coconut vinegar is prepared from the coconut tree. Coconut sap known as toddy is collected from the flower of the coconut tree and matured in earthern pots for about one year. A hot tile with a temperature of 1000 deg. celcius is dipped into the vinegar to aquire a brownnish color and an unique taste. Maturing coconut vinegar is a very lenghty and time consuming process. This is the only vinegar which is used in Goan cusine. All our products use this vinegar and of course with the supervision of our executive chef. We are proud to say that all our products especially pickles and wet masalas use only genuine coconut vinegar. We give you the same vinegar which we use. our honest advise "dont try cooking any Goan dish without COCONUT VINEGAR". N if u do, dont call it Goan.
