Buffering and pH Modification
PH is highly important in many milk products and processes and must be carefully optimised. The FP are highly effective buffers which can maintain the required pH in milk and milk-based products both during production and prior to consumption.

This is particularly useful when heat treating milk as denatured proteins can coagulate in the processing equipment and become carbonated, leading to the formation of undesirable black particulates.
Shelf-life Extension
Polyphosphates demonstrate bacteriostatic and anti-fungal actions by sequestration of the nutritional ions such as calcium and magnesium, effectively removing these ions which the micro-organisms require for survival and growth.
Mineral Enrichment
Phosphate Salts offer a range of calcium phosphates suitable for calcium fortification of dairy products.
