Red Beet Root Colour is Extracted from the roots of the vegetable called Beta Vulgaris. The pigment present in the beetroot is known as betalains which is further classified in Red Betacyanin which gives the red colour.

Although the pigments are water soluble, the susceptibility of the pigments to heat, oxygen, light, and high water activity sometimes restricts the use as a food colorant. Considering these limitations, beet-root juices and further processed beet-root colors are ideal for use in products that have either a short shelf life or low water activity, and are packaged for minimal exposure to light, oxygen and high humidity.

Beet juice can also be used successfully in hot, processed candies if added at the end of the process. Beet powder has excellent stability in applications of coloring dry-mix beverages.
