Air blast freezing is the process of taking a product at a temperature (usually chilled but sometimes at ambient temperature) and freezing it rapidly, between 12 and 48 h, to its desired storage temperature which varies from product to product (e.g. fish = −20 °C, beef = −18 °C).
The trays are placed inside the blast chiller and then a fan blows chilled air over the food, rapidly cooling it down. The rapid cooling reduces loss from evaporation during the cooling process and minimizes the size of the ice crystals that form in the food when it is frozen
