Emu eggs are only available seasonally, generally September through April in India. An average egg weighs between 600 and 700 grams when laid. The eggs are edible consisting of approximately 10 chicken eggs. The egg is mostly yolk but has a much milder flavor than other poultry. The ratio of whites to yolks is 55% to 45 % compared to a chicken egg which is 65% white and 35% yolk. It is excellent when used in cooking. Making a breakfast from an unfertilized Emu egg can feed four people.
The Emu egg has many fascinating features
It is dark green in color and also larger than many other eggs and texture may vary from hen to hen.
These are the longest incubating eggs at 50 days. Because of their large size and natural color they are highly prized by crafters, known as ''eggers'' who decorate eggs. The dark outer green, a middle ''teal'' color and the inner white of the shell all can be used to generate interesting designs.
Eggs can also be used in an art form known as filigree. This is where a pattern is cut entirely thru the shell. Makes a nice nightlight. These eggs can be used to make jewelry boxes, can be painted or even have decals applied.
Commercial incubation time is 49-52 days and the percentage of eggs hatch is usually between 70 to 80% if normal sanitation and handling care is taken. Once hatched, chick survival rates are excellent.
