The idea for Vegitein started when my family moved to Bangalore from the US and we could not find any good mock meats on the market. The few products that were available resembled mashed potatoes with a couple of peas and corn and it didnt have that chunky meat like bite to it. My 3 year old son missed mock meat so much that out of desperation I took the kitchen to see if I could make something similar at home.
I found out that a pretty cool way to copy the texture of meat was through a dish called Seitan. It has roots in 6th century China and its main ingrediant is the condensed form of protein from wheat which is known as vital wheat gluten. So all of our products are based off of this basic recipe with an array of fresh local veggies and spices added to give it an edge. Everything is hand made in my kitchen and you are getting exactly what I serve my family.
Appologies to those of you who a gluten intolorent, our recipes have a very high gluten percentage. I have many good family and friends who stay away from gluten and while it is possible to make a mock meat without it I've still yet to find the perfect recipe. I promise to keep trying though.
