Black pepper, known as king of spices, is a perennial crop grown in a hilly region of India. Pepper crop harvest start from Feb to March and April will be peak arrivals season. Indian black pepper is known for quality and its pungency across the globe. It is also due to the fact that it is grown under shade. Karnataka is the leading pepper producer in India with also significant contribution from Kerala and Tamil Nadu. Though Vietnam is the leading producer of pepper in the world, its quality found to be poor and cannot be compared with Indian produce. Due to limited output and higher prices, Vietnam produce being sourcing and mixed with Indian produce. There is a need for promotion of high quality domestic produce. Dry ginger or dried ginger is processed from fresh ginger mostly by drying under sunlight until it becomes fully dried. Washing, cleaning and grading will part of this process. This dehydration process adds some quality to the produce and result in different medicinal benefits. It is believed that dry ginger facilitates weight loss by improving digestion. Dry ginger can be stored for about 6 months in a room temperature. Its usage for medicinal purpose is found to be substantial. In addition to this, only dry ginger can be converted into powder and stored for long whereas fresh will be consumed immediately.
